The wait is finally over.. I made Ofada rice and sauce at last! I must say that I have never come across anyone that tested Ofada rice and sauce for the first time without craving for more the next day.
Whenever I crave for this meal, I usually buy it from a good local restaurant and always tell hubby about how tasty the sauce can be, yet he never seemed interested to eat it. So after fully convincing him that he’ll love it if he just open his mind to think of how tasteful it can be.
So after preparation and dinner is served he exclaimed ” Is this what I’ve been missing”. I smiled!
So here’s the recipe of Ofada rice and sauce
4 cooking spoon palm-oil
12-12 Scotch pepper
3 Red bell pepper (Tatashy)
3 Green pepper
Kpomo Goat meat
1 Bulb Onion
Ofada sauce Directions
First, wash your assorted meat thoroughly with clean water and dice into bits. Place in a medium size pot and add a cube of seasoning with salt then leave to boil till meat is tender.
While waiting for the assorted meat, remove the seeds from the Red bell pepper, green pepper and wash thoroughly then place in a blender and Puree till smooth. Although, I prefer a rough blending rather than smooth paste.
Pour the pepper puree in an empty pot and cook till all the liquid evaporates.
In an empty pot, Heat the palm oil on low heat for about 15 minutes. This process is known as bleaching. Once the bleaching is done, the palm oil would look more like vegetable oil.
Add the diced onion, pepper puree and Iru and stir fry for 5 minutes.
Add the grounded crayfish, seasoning cube, assorted meat stock including the Assorted meat and beef. Taste to see if you need some more salt, Stir and cover the pot. Turn down the heat and leave to simmer for about 15 minutes.
Ofada Rice Direction
This local rice comes with lot of stones that is if you buy from the local food stuff sellers. But if you choose to buy the already purified one in a packet which is much easier to cook.
So in a bowl of clean water, wash the sorted rice severally with clean water and place in a small pot.Parboil for 10 mins and turn out into a clean bowl.
Wash the parboiled rice with clean water and turn back into the pot. Then Add some salt and boil till the rice softens.
