A Bowl of Cereal

A small bowl of cereal right before bed is sometimes just what the doctor ordered! I don’t know about you, but for me, cereal is certainly a comfort food. Select a whole-grain cereal that is high in fibre and low in sugar and top it with some unsweetened milk. This snack will satisfy your craving.

Almond Nut

One of the best bedtime snacks that you can reach for that will keep you working toward your goals is a piece of fruit and a handful of nuts. A few good ideas include apple slices and some unsalted almonds. Fruit and nuts are both very high in fiber, which will allow you to go to bed feeling satisfied but still hungry for breakfast the next morning!

Fresh Fruit Drink

A glass of fresh fruit will work here too; however, frozen fruit provides that cold, ice cream like mouth feel.  So which ever type of fruit you like, be it apple, watermelon or berries like raspberries, strawberries, any of them are a great choice at any time throughout the day!

Sandwich

Sometimes there is nothing better than a butter sandwich, especially with a tall glass of unsweetened milk right before bed! All you have to do to enjoy this snack is slice one piece of tomato into half,a piece of cucumber and spread one side with your favourite nut butter, place the other half on top and enjoy right before bed. I also like to make this using lettuce and few drop of jam.

 Chocolate

After a long day, it can be very easy to make unhealthy choices once you finally make it home at night. Most people prefer to have chocolates as this tend to satisfy there cravings Instead of giving in to unhealthy cravings, develop a plan and decide what your healthy treat will be. How to Make Oatmeal with Quick-Cooking Oats

Stovetop: For 3 servings, in a medium saucepan bring 3-1/2 cups water and 1 teaspoon salt to boiling. Stir in 2 cups quick-cooking oats. Use 2cups for thicker oatmeal while for soupy oatmeal use 3cups.

Reduce heat and simmer, uncovered, for 1 minute, stirring occasionally. After 5 minutes taste for that that desired taste and thickness you wish

Remove the pan from the heat and serve in a bowl with sugar or honey and condensed milk 

Akara (Bean Cakes)

 

Bean Cakes, Bean Balls, Bean Fritas popularly called “AKARA” is a delicacy popular in Western Nigeria. Widely considered for breakfast or dinner and could be eaten with bread,pap, garri or custard

INGREDIENTS

  • 2 cups Beans, peeled
  • Salt to taste
  • 1 Seasoning cube
  • Pepper to taste
  • 1 Onion bulb
  • Vegetable Oil for deep frying

Directions.

  • Soak the beans in water for 2 hours to make it soft enough for your blender. If you will grind it using the heavy duty grinders in Nigerian markets, it will not be necessary to soak the beans for extended periods of time.
  • Cut the pepper and onions into desirable sizes
  • Grind the peeled beans with the onions and pepper to obtain a very thick paste
  • Mix properly with a cube of maggi, salt and pepper
  • Set some vegetable oil on the cooker to heat up. The oil should be at least 3 inches deep.
  • Put some of the ground beans into a mortar. This should be the quantity you can fry in one go.
  • Stir the beans puree with the pestle in a continuous circular motion. You need to apply some pressure so that you can energize the particles of the beans puree.
  • Scoop into balls and deep fry the beans balls

TIPS WHEN MAKING AKARA

  • Follow these and your Akara will turn out great.
  • Use freshly skinned beans.
  • Use a very small quantity of water when grinding.
  • Smoothen the mix with mortar and pestle before frying.
  • Add salt just before frying.

Akara is enjoyed fresh and hot
