Recipe: Italian Wedding Soup

So I stumbled online at this Italian soup, and it got me wondering what it  taste like. Although from my research I understand its very tasty but how tasty do they mean? Because I can be very particular about how tasty a meal is especially when I’m just trying it for the first time.

An Italian soup is one that consists of green vegetables and meat. Its popular in the United State, where there are many Italian restaurants and can never be found missing in any Italian occasions including weddings.

It’s called Italian Escarole Soup because of the way the ingredients combine, like a happy love. It is simple to prepare, but has enough flourishes to make it special enough for guests.

Italian Wedding Soup Recipe

Serves 6 to 8
3/4 pound ground meat (chicken, turkey, pork, beef, veal, or a combination)
1/2 cup dry bread crumbs or panko
3 large eggs
1/2 cup grated Romano cheese, divided
1/2 cup grated Parmesan cheese, divided
1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano)
1 teaspoon salt
1/2 teaspoons freshly ground black pepper
3 tablespoons olive oil, divided
1 medium yellow onion, diced
4 cloves garlic, minced
8 cups chicken stock
1 bunch greens (such as escarole) trimmed and torn into bite-sized pieces (about 6 lightly packed cups)
Red pepper flakes, optional
Lemon wedges, optional

Greek Dish: Moussaka

I always look forward to attending events.  Reason because of the people I get to meet, and most especially the different meals I get to try. This is  can be very interesting!

So at this year Mobile web Africa event, held at Four points by Sheraton – Lagos, I discovered a dish called Moussaka.

It’s a Greek dish that contains sliced eggplant baked in a ground beef sauce and then smothered in a thin white sauce. Interestingly, this dish can be made in different ways.

Recipes are:

  • 3 eggplants, peeled and cut lengthwise into 1/2 inch thick slices
  •  olive oil
  •  butter
  • 1 pound lean ground beef
  • Ground black pepper to taste
  • 2 onions, chopped
  •  garlic, minced
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  •  dried parsley
  • 1 (8 ounce) can tomato sauce
  • 1/2 cup red wine
  • 1 egg, beaten
  •  milk
  •  butter
  •  all-purpose flour
  •  freshly grated cheese

Directions

  1. On paper towels, lay the slices of eggplant and sprinkle lightly with salt, then set aside for 30 minutes to draw out the moisture. Then in a frying pan over high heat, heat the olive oil. Quickly fry the eggplant until browned. Set aside on paper towels to drain.
  2. In a large frying pan over medium heat, melt the butter and add the ground beef, salt and pepper to taste, onions, and garlic. After the beef is browned, sprinkle in the cinnamon, nutmeg and parsley. Pour in the tomato sauce and wine, and mix well. Simmer for 20 minutes. Allow to cool, and then stir in beaten egg.
  3. To make the bechamel sauce( white sauce), begin by scalding the milk in a saucepan. Melt the butter in a large frying pan over medium heat. Whisk in flour until smooth. Lower heat; gradually pour in the hot milk, whisking constantly until it thickens. Season with salt, and white pepper.
  4. Arrange a layer of eggplant in a greased baking dish. Cover eggplant with all of the meat mixture, and then sprinkle 1/2 cup of cheese over the meat. Cover with remaining eggplant, and sprinkle another 1/2 cup of cheese on top. Pour the bechamel sauce over the top, and sprinkle with the nutmeg. Sprinkle with the remaining cheese
  5. Bake for 1 hour at 350 degrees and serve with chilled drink.

Meat steaks are usually grilled, pan-fried, or broiled, while fish steaks may also be baked.
