Jamaican Corn Meal Dish Recipe ”Dukunu”

I came across this Jamaican meal and I think it’s a  healthy meal with a simple recipe to try . It called Dukuno” made with corn meal/flour, sugar, coconut milk etc. If you love Corn, surely you would  love this dish.

It can easily be mistaken as moimoi but  it’s  actually corn as no kind of oil or fresh pepper is added to it.

INGREDIENTS

2 cups spelt flour

½ teaspoon sea salt

¾ cup agave syrup

½ teaspoon cinnamon

¼ cup grated coconut

1 ½ cups coconut milk

1 teaspoon vanilla

big pot of boiling water (about 2 ½ liter)

METHOD

Quailed banana leaves

1 Heat banana leaves over fire until slightly darkened

2 Cut banana leaves in about 9 inches squares

Putting it together

1 Mixed all dry ingredients and grated coconut together. Add coconut milk, agave syrup and vanilla, mix well.

2 Put about 1/2 cup of mixture unto each quailed banana leave sheet. Fold up the two ends and tie with strings (preferably strings that can be taking from the bark of the banana tree)

Dukunu

2 Drop into boiling water. There should be enough water to cover all parcels. Simmer for about an hour.

Remove banana leaves before eating.

British researchers discovered that increasing beta-carotene consumption from 1.7 to 2.7 milligrammes a day reduced lung cancer risk more than 40 per cent. The average carrot contains about three milligrammes of Beta-carotene.

How To Prepare Custard

 

Knowing how to make custard is a skill you’ll never regret learning. Great for every pudding you can think of. Personally, i enjoy having custard with fried plantain or bean pudding (moi-moi)

Truthfully,every time I make custard it is never smooth, it is always lumpy so how do you make a simple custard that you can use with a desert?

Custard Powder

Water (Hot and Cold)

Evaporated Milk 

Sugar (to taste)

DIRECTIONS

Put some custard powder into a good size bowl.  

Start mixing by pouring a small quantity of cold water into the bowl of custard powder. As you stir,  add some more water till you have a medium mix with no lumps.

Set the bowl aside and put a kettle of water to boil. Make sure the water will be enough. It is better you boil too much water than not have enough water.

Just before the water boils, stir the custard mix very well because some of the custard may have settled at the bottom of the bowl. If not stirred well, this is the major cause of lumps when you start making the custard.

Once the water boils, pour it slowly but steadily into the bowl of custard and stir at the same time. Pouring the hot water slowly and stirring at the same is very important because this prevents lumps from forming.

Once you see the custard starts to thicken, stop stirring and reduce the flow of water you are pouring till the custard has completely set.

Stir the custard very well. If it is too thick for you, you can add a little hot water. But be careful else your custard will become watery. And remember that you will still add liquid evaporated milk. Add evaporated milk and some sugar to taste and stir everything to the way you like it.

Custard is ready to be served.
